Red Curry Satay Baked Ramen with Bok Choy and Fried Egg

I’ve been dying to make this recipe for a while. Peak cozy comfort food - a full, balanced meal with saucy noodles, roasted baby bok choy, and savoury ground turkey, all finished with a runny fried egg on top. 🍜🔥
It feeds six, it’s packed with flavour, and it’s the perfect mix of creamy, spicy, and slurpy.

Ingredients
Sauce
6 Tbsp peanut butter
3 Tbsp red curry paste
3 tsp minced garlic
3 tsp grated or minced ginger
3 Tbsp soy sauce
3 tsp sesame oil
1 can (400 mL) coconut milk
2 cups chicken or vegetable stock
Ramen + Add-Ins
6 bricks instant ramen (discard flavour packets)
700 g ground turkey (about two small 350 g packs)
8 baby bok choy, halved lengthwise
Oil for stir-frying turkey and eggs
6 eggs, fried separately
To Serve
Fresh cilantro
Chili oil
Sesame seeds (optional)
Lime wedges (optional)
Directions
1. Make the Sauce
Whisk together the peanut butter, red curry paste, garlic, ginger, soy sauce, sesame oil, coconut milk, and chicken stock until completely smooth.
2. Divide the Sauce
½ of the sauce → for the ramen
¼ of the sauce → for the bok choy
¼ of the sauce → for the ground turkey
3. Baked Ramen
Preheat oven to 180°C / 350°F.
Place the ramen bricks in a large baking dish. Pour half the sauce evenly over top, pressing the noodles down gently.
Cover tightly with foil and bake for 20 minutes.
Flip the noodles, remove the foil, and bake another 10 minutes until softened, glossy, and saucy.
4. Baby Bok Choy
Place halved bok choy in a separate baking dish.
Pour ¼ of the sauce over top.
Bake at the same temperature for 20–25 minutes, until tender and lightly caramelized.
5. Ground Turkey
Heat a little oil in a pan and cook the 700 g ground turkey until browned.
Stir in the remaining ¼ of the sauce and simmer for a few minutes to coat well.
6. Eggs
Fry eggs in a pan to your liking and set aside.
7. Assemble + Serve
Dish up the saucy baked ramen, add roasted bok choy, spoon over the curry-coated turkey, and place a fried egg on top.
Finish with chili oil, sesame seeds, cilantro, and lime.
