Crispy Potato Beef Casserole

This Crispy Potato Beef Casserole is a twist on Shepherd's or Cottage pie- loaded with veggies, simmered in a rich beef gravy, and topped with thin, buttery potato slices that bake up golden + crispy. Family-friendly and makes the BEST leftovers. 🥔🍴

Ingredients:
- 2 tbsp olive oil
- 1 yellow onion, diced
- 1 carrot, diced or grated
- 1 zucchini, diced or grated
- 1 celery stalk, diced
- 1 tbsp garlic, minced or powder
- 2 tbsp thyme leaves (or 2 tsp dried thyme/parsley)
- 1 lb ground beef
- 2 tbsp tomato paste
- 2 tbsp flour
- 1 tbsp red wine vinegar
- 2 cups beef stock
- 1 tbsp Worcestershire sauce
- 1 tbsp sugar
- 1 tsp salt + 1 tsp black pepper
- 1 lb potatoes, very thinly sliced
- 3 tbsp melted butter or margarine
- 1\2 cup grated cheese (optional, for topping)
Instructions:
1️⃣ Preheat oven to 400°F (200°C).
2️⃣ Brown ground beef with a pinch of salt + pepper, set aside.
3️⃣ Heat olive oil, sauté onion, celery, carrot, zucchini, and garlic until softened.
4️⃣ Add tomato paste, then flour. Stir well.
5️⃣ Pour in vinegar, beef stock, Worcestershire, sugar, salt + pepper. Simmer until thickened.
6️⃣ Stir beef back in, then transfer to a baking dish.
7️⃣ Layer potatoes over top, brushing each layer with melted butter.
8️⃣ Bake 20 min, sprinkle cheese if using, then bake another 30 min until golden + crispy.
9️⃣ Let rest 10 min, sprinkle with herbs, and enjoy!
💡 Pro tip: grate the veggies if you’ve got picky eaters - it blends much easier and they may like the texture better.
