Crispy Chicken 'Dumpling' Cups

Crispy Chicken 'Dumpling' Cups

Makes 24 cups


Ingredients

  • 1 lb ground chicken (cooked/browned first, excess liquid drained)

  • 2 cloves garlic, grated

    • Optional: 1 tbsp pre-minced garlic or garlic powder

  • 2 tsp ginger, grated or minced (skin removed)

    • Optional: 2 tsp ginger powder

  • 1 tsp white or black pepper

  • 1.5 tbsp soy sauce

  • 2 tsp sesame oil

  • 4 scallions, finely chopped (reserve some for garnish)

  • 1/3 cup cabbage, shredded & chopped

  • 1 pack wonton wrappers

  • Avocado oil spray

  • 1 Tbsp chili crunch (optional, if you like spice)

  • 2 Tbsp dumpling or potsticker dipping sauce (see example below)

  • Optional: Furikake seasoning

  • Optional: Serve with side salad


Directions

  1. Preheat oven to 400°F.

  2. Prepare chicken mixture: After the chicken is already browned in a large frying pan, add soy sauce, garlic, ginger, white pepper, sesame oil, cabbage, and 3/4 of the scallions. Stir well to coat.

  3. Prepare wonton cups: Lightly spray a muffin tin with avocado oil. Place one wonton wrapper into each compartment, pressing gently to form a cup shape.

  4. Fill cups: Spoon the chicken mixture into each wonton wrapper (about 2 Tbsp each). Spray the tops lightly with avocado oil.

  5. Bake on the middle rack for 10-12 minutes, rotating the tray halfway through, until the wonton wrappers are crispy and golden.

  6. Sauce mix: In a small bowl, stir together the dumpling sauce and chili crunch (if using).

  7. Finish & serve: Remove cups from the oven and let them cool for 5 minutes in the tin, then transfer to a paper towel–lined plate. Drizzle with the sauce, sprinkle on extra scallions and furikake, and enjoy!

Quick Dumpling Sauce Recipe

A simple homemade version you can whisk together in 1–2 minutes:

  • 2 Tbsp soy sauce

  • 1 Tbsp rice vinegar

  • 1 tsp sesame oil

  • 1 clove garlic, grated

  • 1/2 tsp ginger, grated

  • 1/2 tsp chili flakes or chili oil (optional, for spice)

  • 1/2 tsp honey or sugar (optional, for balance)


Mix all ingredients in a small bowl and serve alongside or drizzle over the wonton cups.
